Pikelets

Pikelets seem to be a favourite in my house at the moment. Little miss is loving them for breakfast and snacks as well! Plus, hubby is enjoying them too! They are super easy to whip up and are always sure to be a crowd pleaser. 

 

Traditional pikelets and pancakes contain refined wheat flour, however my versions contain nutritious ingredients that can be enjoyed by everyone, including those with intolerances.

 

 

 

 

Blueberry Pikelets:

 

(Dairy free + Gluten Free Option)

 

Ingredients: 

 

1 cup spelt flour 

3/4 cup milk of choice (I use Nutty Bruce almond & coconut milk ) 

1 egg

100g of blueberries (can be fresh or frozen)

1 tablespoon honey or maple syrup

1 tsp vanilla extract

1 tsp baking powder

1 tsp bi-carb soda

 

Method:

 

1. Add all ingredients (except blueberries) into a bowl and whisk until combined.

2. Fold in blueberries

3. Using a ladle or tablespoon, spoon small circles into a frypan on a low heat. Once you see air bubbles in the mixture, it's time to flip them over. 

 

 

Notes:

- If you would like to make this gluten free use buckwheat flour instead of spelt flour

- You can also make these plain by leaving out the blueberries or experiment with other berries such as raspberries

 

 

 

 

Flourless Banana Pikelets:

 

(Gluten Free, Dairy Free)

 

Ingredients:

 

2 eggs

2 medium bananas

1 tsp of cinnamon 

1 tsp vanilla extract 

 

 

Method: 

 

1. Mash the banana until it is a smooth consistency

2. Add the egg, cinnamon & vanilla. Mash until combined.

3. Using a ladle or tablespoon, spoon small circles into a frypan on a low heat. Once you see air bubbles in the mixture, it's time to flip them over. 

 

Notes: If you want to make a larger batch, add another egg and another medium sized banana. I found that too much banana makes the pikelets very mushy, and too much egg makes them turn into an omelette and almost a bit rubbery. 

 

 

 

 

Serving Suggestions:

 

Some great toppings for your pikelets include:

 

a) yoghurt & fresh fruit

b) whipped coconut cream (DELICIOUS!)

c) Drizzle of honey 

d) Sprinkle of Cinnamon 

 

 

If you want to make your pikelets into pancakes, just double the mixture & cook them larger than you would pikelets!
